After going through a health scare with a really close relative who was really young at the time, it really made me reevaluate my life. I realized that it doesn't matter how ambitious you are, how motivated, or how much talent you have, you really have nothing without your health. I have been focused on trying to incorporate more greens into my daily meals. The recipe that I am going to share below is called a Superfoods Salad because of the Blueberries which is at the top of most superfoods lists because they are rich in vitamins, soluble fiber, and phytochemical. Many of these same nutrients can be found in other berries such as strawberries. I used Spinach instead of lettuce because all across the board spinach has much more nutrients. This light fruity salad also makes the perfect summer salad for when it's hot and you don't want to eat something heavy. Please find the recipe below:
Salad Ingredients:
4 Cups of Baby Spinach Leaves
2 Cups of fresh strawberries diced
1/2 Cup of fresh blueberries
1/4 Cup of Almond Slices
1/4 Cup of Dried Cranberries
Homemade Vinaigrette Dressing:
In a screw top jar combine vingar, mint, honey, olive oil, and salad. For extra flavor blend or juice raspberries, or blueberries and shake well.
Add all the salad ingredients to a bowl with a top, drizzle salad dressing on top, apply lid, and shake well. Sprinkle with a bit of pepper and voila!
This salad recipe is also good for diabetics since these fruits are low on the GI. Just be careful with the honey or remove the honey in the salad dressing.
