After going through a health scare with a really close relative who was really young at the time, it really made me reevaluate my life. I realized that it doesn't matter how ambitious you are, how motivated, or how much talent you have, you really have nothing without your health. One day I was watching an interview with Russell Simmons (who is Vegan) and he started to explain all of the things that are done to meat and it really made me sick to my stomach. I decided that day that I would give up meat. It was no easy feat, because I am a self proclaimed carnivore. Lol. It has now been 3 months since I have had meat, and I don't have any immediate plans to go back. It has not been easy, but slowly, it is getting easier. Anyway, when I am stuck on what to eat and can't think of anything else, salads have been my go to meal. I just change around the ingredients. The recipe that I am going to share below is called a Superfoods Salad because of the Blueberries which is at the top of most superfoods lists because they are rich in vitamins, soluble fiber, and phytochemical. Many of these same nutrients can be found in other berries such as strawberries. I used Spinach instead of lettuce because all across the board spinach has much more nutrients (look it up). Please find the recipe below:
4 Cups of Baby Spinach Leaves
2 Cups of fresh strawberries diced
1/2 Cup of fresh blueberries
1/4 Cup of Almond Slices
1/4 Cup of Dried Cranberries
Homemade Vinaigrette Dressing:
In a screw top jar combine vingar, mint, honey, olive oil, and salad. For extra flavor blend or juice raspberries, or blueberries and shake well.
Add all the salad ingredients to a bowl with a top, drizzle salad dressing on top, apply lid, and shake well. Sprinkle with a bit of pepper and voila!
This salad recipe is also good for diabetics since these fruits are low on the GI. Just be careful with the honey or remove the honey in the salad dressing.
